About the Agency:
The Virginia Department of Juvenile Justice (DJJ) protects the public by preparing court-involved youth to be successful citizens. About the Job:
The incumbent will be directly responsible for all kitchen functions including preparation, scratch cooking, serving, and maintenance of quality standards, sanitation, and cleanliness. The incumbent will also be responsible for training employees in methods of cooking, preparation, plate presentation, portion, sanitation, and cleanliness. They will assist with supervising, monitoring, instructing, and training all aspects of food preparations in the kitchen. In collaboration with the leadership team, they will ensure that all team members perform their jobs adequately and meet the Master Menu and Standardized Recipes guidelines and quality standards. Enforce safety in the kitchen relating to food preparation and sanitation. Assist with the ServSafe and Apprenticeship Program Training. Required to assist with meal deliveries to the Resident’s Units/Pods during emergencies. Fill in as needed to ensure meal service standards and efficient operations.

 

This position will serve on an hourly basis (on average 29 hours per week) not to exceed 1500 hours per wage calendar year (May 1- April 30). This hourly role does not include agency-paid benefits.

Minimum Qualifications

Knowledge of correct methods of storage and inventory. Knowledge of correct nutritional standards and how they are enforced. Ability to identify, and develop training programs or classes, and teach or instruct others. Demonstrated ability to forecast needs for food products and fully utilize any leftover foods. Ability to supervise residents working in the kitchen and dining hall. Ability to read, write, follow, and give directions. Document temperatures such as food being prepared, served, and equipment used. Must be able to communicate clearly with managers, supervisors, kitchen, and dining room personnel, and visitors. Must be able to meet physical demands such as standing for long periods, reaching, bending, stooping, and frequently lifting to 50 pounds. Computer skills in Word and Excel.

Additional Considerations

Prior food service experience in a chef's capacity. Experience in specialized culinary arts and food safety training. Additional consideration is given to bilingual applicants.
